Description

Pineapple skin ginger mint tea made by simmering washed pineapple peel and core with fresh ginger for 45 minutes, then steeping fresh mint off-heat. Tested 11 times. Bright, bold, zero calories, and zero waste.


Ingredients

  • Skin and core from 1 whole fresh pineapple (about 2 to 3 cups loosely packed peel and core pieces)
  • 6 cups cold water
  • 1-inch piece fresh ginger root, peeled and sliced into 4 to 5 thin coins
  • 10 to 12 large fresh mint leaves (about 1/4 cup loosely packed)
  • 1 tablespoon fresh lemon juice (about half a lemon, added off-heat after straining)
  • Optional: 1 cinnamon stick
  • Optional: 1 tablespoon raw honey or liquid stevia to taste (added after straining, never during boil)
  • Optional: 1 pinch turmeric powder for anti-inflammatory boost

Instructions

  • 1. Scrub the pineapple skin under running water or soak 5 minutes in cold water with 1 tablespoon baking soda, then rinse clean. Cut the skin off in long downward strips, keeping a thin layer of fruit attached. Slice core into 4 to 5 pieces. Cut skin strips into rough 2-inch pieces. Add all skin and core pieces to a medium pot.
  • 2. Add sliced ginger coins to the pot with the pineapple skin. Pour in 6 cups cold water. Starting with cold water extracts more flavor from both the pineapple skin and the ginger than adding them to boiling water.
  • 3. Turn heat to medium-high and bring to a full rolling boil, about 8 to 10 minutes. Reduce to medium-low and simmer uncovered for 45 minutes. The liquid should deepen to a warm golden color. Add 1/2 cup water at the halfway point if the level has reduced significantly.
  • 4. Remove the pot completely from heat. Add the fresh mint leaves. Cover the pot and steep off-heat for exactly 5 minutes. Do not add mint during the boil as the volatile oils break down under prolonged heat.
  • 5. Pour through a fine mesh strainer into a large pitcher or heat-safe jar, pressing gently on the solids. Add fresh lemon juice and stir. Add honey or stevia now if using while the tea is still warm enough to dissolve. Serve hot immediately or cool to room temperature and pour over ice. Keeps refrigerated in a sealed glass jar up to 4 days.

Notes

  • Produce safety: always wash pineapple skin thoroughly before use. Use the baking soda soak method for conventional non-organic pineapple to reduce surface pesticide residue.
  • Frozen pineapple skin: save washed peel and core in a zip-lock freezer bag each time you eat a pineapple. Add straight from frozen to the pot with cold water. No need to thaw.
  • Bromelain tip: avoid a hard rolling boil for the full cook time. Medium-low simmer preserves more bromelain enzyme activity than aggressive high-heat boiling.
  • Batch prep: make a full 6-cup batch on Sunday and refrigerate. Flavor deepens slightly on day 2. Reheat single portions in a small saucepan over low heat.
  • Mint choice: fresh spearmint is ideal for its milder, sweeter menthol profile. Fresh peppermint gives a more intense cooling finish. Dried mint is not recommended.
