Description

Dr. William Li honey recipe a fermented raw honey and garlic protocol taken daily on an empty stomach to support blood sugar regulation, insulin sensitivity, and gut health. Inspired by Dr. Li’s 5x5x5 eating framework from Eat to Beat Disease.


Ingredients

1 cup raw unfiltered honey (Manuka or dark wildflower preferred)

8–10 fresh garlic cloves, peeled

1 clean wide-mouth glass mason jar with loose-fitting lid


Instructions

1. Peel 8–10 fresh garlic cloves and place them into a clean wide-mouth glass jar.

2. Pour 1 cup of raw unfiltered honey over the garlic until all cloves are fully submerged — no garlic poking above the surface.

3. Seal the jar loosely so fermentation gases can escape. Do not airtight seal.

4. Leave the jar at room temperature away from direct sunlight for 7 to 14 days.

5. Flip the jar upside down once every day to keep all cloves fully coated in honey.

6. After 7–14 days the honey will thin slightly and the garlic will turn golden and mellow in flavor.

7. Each morning on an empty stomach, eat 1 fermented garlic clove and take 1 teaspoon of the fermented honey.

8. Wait 15–20 minutes before drinking or eating breakfast.

9. Follow with 1 cup of green tea for maximum blood sugar support.

Notes

Always use raw unfiltered honey pasteurized honey lacks the live enzymes needed for proper fermentation.

Manuka honey or dark wildflower honey deliver the highest polyphenol content and best results.

The garlic becomes milder and slightly sweet after fermentation it does not taste sharp.

Store the finished jar at room temperature for up to 3 months or refrigerate for up to 6 months.

Pair this morning protocol with Dr. Li’s recommended green tea (jasmine or EGCG-rich) for enhanced insulin sensitivity.

Do not use a metal lid it can react with the honey during fermentation. Glass or plastic lid only.
