Ingredients
2 cups sweet potatoes, peeled and cut into half-inch cubes
2 tablespoons extra virgin olive oil, divided
16 oz lean ground beef, strictly 90/10 blend
3 tablespoons bold taco seasoning
1.5 cups full-fat cottage cheese
1 medium Hass avocado, sliced
2 tablespoons hot honey
1 teaspoon kosher salt
0.5 teaspoon coarse black pepper
Fresh cilantro for garnish
Instructions
- Toss sweet potatoes in 1 tbsp olive oil, half the salt, and pepper. Roast at 425F for 28 minutes until edges burn slightly.
- Heat skillet over medium-high. Add remaining oil. Drop in beef and let sear for 2 minutes without touching.
- Break beef into crumbles, cook until browned. Add taco seasoning and toast for 30 seconds.
- Pour in 1/3 cup cold water. Scrape the pan and let sauce thicken until glossy.
- Assemble hot potatoes and beef in a bowl. Top immediately with cold cottage cheese, avocado, and a heavy drizzle of hot honey.
Notes
Storage: Keep hot and cold ingredients separated in the fridge for up to 5 days.
Substitution: Blend the cottage cheese if you hate the curd texture.
