1 inch fresh ginger root, thinly sliced

34 tablespoons raw honey

6 cups filtered water

Fresh mint sprigs (optional garnish)

Pineapple slices (optional garnish)


Instructions

1. Peel and chop the ripe pineapple into chunks, catching any juice that runs out.

2. Pour 6 cups of water into a large pot and bring to a boil over medium-high heat.

3. Add pineapple chunks with juice, sliced ginger, and crushed lemongrass stalks to boiling water.

4. Reduce heat to medium-low and simmer gently for 10-15 minutes until tea turns golden amber.

5. Remove from heat and stir in honey while tea is still warm until completely dissolved.

6. Strain tea through fine mesh strainer into pitcher, pressing gently on solids to extract flavor.

7. Let cool to room temperature, then refrigerate for 1+ hour if serving cold, or pour into mugs immediately for hot tea.

8. Serve over ice with mint and pineapple garnish for cold version, or enjoy warm in mugs.

Notes

Use the ripest pineapple you can find for maximum bromelain enzyme content and natural sweetness.
