Ingredients

¾ cup milk
1 large egg

Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  • In another bowl, beat the milk, egg, melted butter, and vanilla extract until combined.

  • Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are fine. Let the batter rest for 5 minutes.

  • Heat a non-stick skillet over medium heat and lightly grease with butter or oil.

  • Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form around the edges and the surface looks set.

  • Flip carefully and cook until golden brown on the other side.
