Ingredients
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
¼ teaspoon salt
¾ cup milk
1 large egg
2 tablespoons melted butter or vegetable oil
1 teaspoon vanilla extract (optional)
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the milk, egg, melted butter, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are fine. Let the batter rest for 5 minutes.
Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form around the edges and the surface looks set.
Flip carefully and cook until golden brown on the other side.
Serve warm with your favorite toppings and enjoy!
