Ingredients
2 cups cooked white or brown rice (or puffed rice)
1 cup dark chocolate chips (70% cocoa or higher)
2 tbsp almond or peanut butter (optional)
Pinch of sea salt (optional)
Instructions
1. Melt the dark chocolate in a saucepan over low heat.
2. Stir in nut butter until fully blended and smooth.
3. Remove from heat and mix in the rice until evenly coated.
4. Line a pan with parchment and press mixture into an even layer.
5. Chill in the fridge for 45–60 minutes until firm.
6. Slice into bars or squares and enjoy.
Notes
For added crunch, stir in toasted nuts or seeds.
Use puffed rice for a crispy version.
Store in fridge for up to 1 week or freeze for longer freshness.
