Description

1 ripe banana (heavily spotted for best sweetness)

1 large egg

50g granulated sugar (3 tablespoons plus 1 heaping teaspoon)

100g all-purpose flour (about 3/4 cup)

1 teaspoon baking powder

60g chocolate chips (heaping 1/3 cup, semi-sweet or dark)

Pinch of salt (strongly recommended)

Optional: flaky sea salt for topping before baking


Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper or a silicone mat.

2. Add banana, egg, sugar, flour, baking powder, salt, and chocolate chips to a blender or food processor.

3. Blend for 30 seconds until smooth. The chocolate chips will break into a mix of dust and small chunks throughout the batter.

4. Let batter rest in the blender for 2 minutes. This allows the baking powder to activate.

5. Scoop 6 equal portions onto the prepared baking sheet using a cookie scoop or large spoon. Leave at least 2 inches between each portion. Do not flatten.

6. Optional: sprinkle a pinch of flaky sea salt on top of each portion before baking.

7. Bake for 8 to 10 minutes until edges are golden and set. The center will look slightly underdone. That is correct.

8. Remove from oven and let cool on the pan for at least 3 to 4 minutes before lifting. They firm up as they cool.

Notes

Use a banana with brown spots for the best natural sweetness and flavor. A barely ripe banana will produce a bland result.

Parchment paper or a silicone mat is essential for clean release. A greased pan alone will not work well.

For gluten-free pookies: substitute a certified gluten-free 1-to-1 baking flour blend.

For vegan pookies: replace the egg with a flax egg (1 tablespoon ground flaxseed plus 3 tablespoons water, rested 5 minutes).

Store at room temperature in an airtight container for up to 2 days, or refrigerate for up to 5 days.

Reheat in toaster oven at 325 degrees F for 3 to 4 minutes for best texture. Microwaving for 15 seconds also works.

To freeze: cool completely, freeze flat on a tray for 1 hour, then transfer to a freezer bag. Reheat from frozen at 325 degrees F for 4 to 5 minutes.
