Ingredients
2 ripe bananas
1/2 cup cottage cheese
1/2 cup sugar
2 eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a bowl, mash the bananas and mix in cottage cheese, sugar, eggs, and vanilla.
3. In another bowl, combine flour, baking soda, salt, and cinnamon.
4. Gradually fold the dry ingredients into the wet ingredients, stirring until just combined.
5. Pour the batter into a greased loaf pan and bake for 60-70 minutes.
6. Let cool before slicing and serving.
Notes
For muffins, reduce baking time to 20-25 minutes.
You can add walnuts or chocolate chips for extra flavor.
