Instructions

1. Heat 2 tablespoons olive oil in a large stockpot or Dutch oven over medium heat.

2. Add diced onion, celery, bell pepper, and carrots to the pot. Sauté for 5 to 7 minutes, stirring occasionally, until vegetables begin to soften.

3. Add minced garlic and cook for 1 minute until fragrant, stirring constantly to prevent burning.

4. Pour in 6 cups of chicken broth or vegetable broth.

Notes
